I found this recipe on a fellow blogger's site, and am making it for the second time this morning. It is really a hit with the kids. It tastes similar to a chewy oatmeal cookie. Anytime you can legally have something this good for breakfast, I'm in.
Baked Oatmeal
2 eggs, beaten
3/4 cup brown sugar
1/2 cup oil
2 tsp baking powder
1 tsp salt
1 tsp cinnamon
2 apples, diced
3 cups oats (quick or old-fashioned)
1 cup milk
Mix and pour into greased 9x13 pan. Sprinkle a little brown sugar on top, and bake for 25 minutes at 350.

Yum!!!!!!!! Ok, definately adding that to our breakfast menu while the kids are out of school for Christmas!
We tried this yesterday morning. Yummo! I am eating the warmed leftovers as I type. Next time I am going to try and mix it the night before and put in the fridge. Not sure becasue of the soak time if it will turn out the same but we will see.
